Each year millions of people throughout the world celebrate Anzac Day on April 25. ANZAC stands for Australian and New Zealand Army Corps whose soldiers were known as Anzacs. Anzac Day is one of the most important National Holidays for both Australia and New Zealand, but it is also celebrated in other smaller countries. It is a day to honour members of the ANZAC who fought in the first major military action by the Australian and New Zealand forces during the First World War around 1914-1915.
It is commonly believed that the wives and loved ones of the ANZAC would send “Anzac Cookies/Biscuits” to their men during that war. The cookies were able to withstand not only the overseas travel, but still be edible. They were a welcome treat from home for the soldiers who were far away.
Today’s versions have changed somewhat and are prepared in Australia and New Zealand to help remember the ANZAC soldiers, not only on ANZAC day, but thought out the year. The AZNAC cookie is known as the National “Biscuit”, as the people from “down under” like to call them. ANZAC Cookie/Biscuits recipes are used throughout the world because it produces a delicious crisp cookie with a rich caramel colour and taste. Ready to learn how to make Anzac Cookies? Today there are many different ways to prepare this cookie. Here is just one of them, my favourite, that I’m hope you will enjoy as much as I do.
ANZAC Cookies/Biscuits1 Cup (225ml) All-Purpose Flour
1 Cup (225ml) Granulated Sugar
1 Cup (225ml) Rolled Oats
1 Cup (225ml) Coconut
1/2 Cup (125ml) Melted Butter or Margarine
2 Tbsp. (30ml) Golden Syrup (aka Corn Syrup, but you could use honey)
1 tsp (5ml) Baking Soda
1/4 Cup (60ml) Boiling Water
1) Stir together the flour, sugar, oats and coconut in a large mixing bowl. Create a well in the center.
2) Add the melted Butter (Margarine) into the well.
3) Dissolve the baking soda into the boiling water and add into the center of the mixture. Mix well.
4) Drop by spoonfuls onto greased baking sheets.
5) Heat in a 350F (180C) oven for about 8-10 minutes. It should produce between 2-3 dozen cookies. Left over cookies, if there are any, should be stored in a sealed container. If you desire a crunchier cookie, just add a little more golden syrup.
